STRAWBERRY, ROSE & POMEGRANATE PAVLOVA

A showstopper of a dessert, this stunning pavlova consists of beautifully crisp but chewy, marshmallowy meringue topped with a fragrant rose cream and bejewelled with sweet tangy pomegranates, juicy strawberries, decadent rose and pistachio Turkish delights and finished off with a sprinkling of sweet earthy  mint and dried roses as well as a drizzle of pomegranate molasses syrup. A truly indulgent and magical dessert.

For a very long time I was scared to attempt making pavlovas. I felt that these beautiful creations could only be made by an experienced chef as to me pavlovas were a bit magical. How else could you explain the crisp cloud like meringues that were soft and chewy and marshmallowy all in one bite, contrasting with the sweet and creamy filling that sits so elegantly on top without crushing down the delicate meringue. In my eyes pavlovas looked like they had come straight out of some magical fairy-tale and were too advanced for a mere human such as me to try! This all changed thanks to the lovely James Martin! He made a pavlova on one of his cooking shows and I could not believe how simple it was to make. All these years I had deprived myself! Pavlova’s in fact are easy and stress free and are now one of my favourite desserts to make for dinner parties. I use a mixture of caster and icing sugar as I have found that with this combination you get a chewier meringue which I absolutely adore!

This rose, strawberry and pomegranate pavlova is moreishly delicious, comprising of crispy marshmallowy meringue topped with delicately floral rose cream and topped with sweet juicy strawberries and sharp bursts of pomegranate; and finished off with earthy fragrant fresh mint and chewy decadent rose and pistachio Turkish delights and a drizzle of sour and sweet pomegranate molasses syrup to cut through the sweetness. This stunning spectacle of a dessert is sure to elicit a chorus of oohs and aahs from your guests as it is after all a bit of magic!

Ingredients
  • Meringue:
  • 5 large egg whites
  • 1 cup (200g) caster sugar
  • ½ cup (60g) icing sugar
  • 1 tsp cornflour
  • 1 tsp white vinegar
  • Rose Cream:
  • 2 cups (480ml) double cream
  • 1 ½ tbsp rose water
  • 1 ½ tbsp caster sugar
  • 1 tsp vanilla paste
  • Pomegranate Molasses Syrup:
  • 2 tbsp pomegranate molasses
  • 3 tbsp icing sugar
  • Toppings:
  • 2 cups (400g) strawberries, halved
  • 1 cup (180g) pomegranate seeds
  • ¼ cup (4 – 6) rose & pistachio Turkish delights, cut into bite size pieces
  • 1 tbsp mint, finely chopped
  • 1 tbsp dried edible roses / petals
Directions
  • Step 1 Preheat oven to 100°C (210°F). Line a large baking tray with baking paper.
  • Step 2 In a clean, dry bowl, whisk egg whites to soft peaks.
  • Step 3 Gradually add in the sugars, 1 tbsp at a time, until the whites form a stiff peak.
  • Step 4 Add the cornflour and vinegar and whisk till glossy.
  • Step 5 Spoon the meringue onto the baking tray, forming a large circle. I like to slightly flatten the middle, where the cream and toppings will go so that there is almost like a border of higher meringue surrounding the flatter area.
  • Step 6 Bake on the middle shelf, for 3 – 4 hours until dry and crisp. Turn the oven off and leave the meringue to cool inside.
  • Step 7 Make Rose Cream: Combine all the ingredients together and whisk until mixture forms soft peaks. Set aside.
  • Step 8 Make Pomegranate Molasses Syrup: Beat the pomegranate molasses and sugar till smooth. Set aside.
  • Step 9 Assemble Pavlova: Spoon the rose cream in the centre of the meringue. Scatter the strawberries and pomegranate seeds on top. Lightly drizzle the pomegranate molasses syrup so that it falls down the pavlova. Sprinkle the mint and dried roses and finish off with a scattering of the Turkish delight.
