STRAWBERRY & MASCARPONE BRIOCHE

A quick and easy decadent breakfast or brunch of rich toasted brioche with creamy lashings of sweet mascarpone with swirls of freshly cut strawberries & vanilla.

 

This is my special breakfast that my lovely husband makes for me on my birthday, and so of course it is one of my favourite things to eat. It really is a decadent and rich treat. It is his creation that he made up just for me after one night of watching the movie, ‘Kate & Leopold’, a Meg Ryan romcom, a definite must see if you are a fan of romcoms. In the movie Leopold makes Kate a breakfast of mascarpone and strawberries on toast. Me being me of course kept going on about how delicious that sounded, and my husband remembered this and surprised me with his version on my birthday a few weeks later.

 

 

He is really cute about it and bless him, it is so quick and easy to make, but it takes him nearly an hour to make. He ends up destroying the kitchen in the process, using nearly every dish available whilst burning over half the brioche loaf and dropping strawberries and icing sugar all over the place. I did have a heart attack the first time I saw the kitchen after he had served me my romantic birthday breakfast, but he does end up cleaning it all up! The proud look on his face when he brings the brioche toasts with strawberry and mascarpone to me on my birthday mornings, sometimes with a bit of mascarpone smeared on his face, is just priceless and has now become our birthday tradition that I cherish and look forward to each year. If you want to make someone feel special or want to treat yourself, serve up this decadent breakfast treat.

A quick and easy decadent breakfast or brunch of rich toasted brioche with creamy lashings of sweet mascarpone with swirls of freshly cut strawberries & vanilla.

Ingredients
  • 4 thick cut slices brioche loaf
  • ¾ cup (170g) mascarpone
  • 1 ½ tbsp icing sugar
  • 1 tsp vanilla bean paste
  • ½ cup (160g) strawberries, cut into pieces
Directions
  • Step 1 Lightly toast the brioche slices, either under the grill or in the toaster.
  • Step 2 Beat the mascarpone with a whisk to loosen.
  • Step 3 Add in the sugar and vanilla. Stir till fully combined.
  • Step 4 Stir in the strawberries carefully as they will burst into the mascarpone turning it pink.
  • Step 5 Spread on the brioche toasts.
  • Step 6 Enjoy x
