ORANGE & YOGURT CUPCAKES

Moist & light, infused with fragrant citrus, with a beautifully creamy frosting that has hints of tangy orange but also rich Greek yogurt to cut through the sweetness. These are pure freshness and a joy to eat.

 

In my late twenties I went through a phase of being obsessed with cupcakes, I was head over heels in love with them. I mean what is there not to love, they are basically perfect little cakes that you get to have all to yourself and are just so adorable. You can’t look at a cupcake without smiling!

 

 

This was the phase when I was obsessed with opining up my own little cupcake shop. I used to go to work everyday sitting there daydreaming about different cupcake flavours and names for my little bakery. I guess it was my little way of escaping and I used to get so happy seeing how it made everyone else around me so happy when they would have one of my cupcakes. This little beauty was one of my creations from back then and really is a joyful cupcake.

 

 

They are so beautifully moist due to the yogurt in the batter and the additional brushing of orange syrup just after baking. The smell of the orange zest is just so freshly vibrant and powerful and within minutes the kitchen has the most enchanting citrusy aroma. The frosting is a perfect balance of orangey freshness but tart with a subtle sweetness due to the Greek yogurt. These cupcakes are sure to make you smile!

 

 

ORANGE & YOGURT CUPCAKES

Ingredients
  • Cupcake:
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla paste
  • ¾ cups (190g) Greek yogurt
  • 1 ½ cup (190g) plain flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp orange zest
  • ¾ cup (180ml) oil
  • Orange Syrup:
  • ¼ cup (55g) icing sugar
  • ½ cup (120ml) orange juice
  • Orange Yogurt Frosting:
  • 4 cups icing sugar
  • ½ cup unsalted butter
  • ½ cup Greek yogurt
  • 1 tbsp orange zest
  • ½ tsp vanilla paste
Directions
  • Step 1 Preheat oven to 175°C (350°F). Line a cupcake tray with paper liners.
  • Step 2 Using a stand mixer or hand mixer, beat the eggs and sugar until slightly thickened and pale yellow in colour.
  • Step 3 Beat in the vanilla and yogurt. Mix till fully combined.
  • Step 4 Add in the flour, baking powder, salt and orange zest and mix well.
  • Step 5 Pour in the oil and beat till just combined.
  • Step 6 Pour batter into prepared cupcake liners, filling halfway up and bake for 20 – 25 minutes, until golden on top and springy to touch and toothpick inserted into the centre comes out clean.
  • Step 7 Make Orange Syrup: Combine the icing sugar and orange juice and whisk till smooth. As soon as the cupcakes come out of the oven, remove from tin and brush the syrup generously on top of each cupcake. Leave cupcakes to cool completely.
  • Step 8 Make Frosting: Using a mixer beat the icing sugar and butter. (To avoid icing sugar cloud going everywhere, wet a few sheets of kitchen paper and cover the top of the mixing bowl so that it catches any icing sugar clouds).
  • Step 9 Add in the yogurt, orange zest and vanilla and beat for at least 5 minutes until fluffy and light. Transfer to a piping bag.
  • Step 10 Pipe the frosting on top of the cupcakes as desired.
  • Step 11 Enjoy x
