Light and fluffy donut holes speckled with chia seeds and dusted with zesty orange icing sugar. They really are little bites of citrusy heaven!

 

I am forever trying to come up with different breakfast ideas, especially for the weekend. After a hectic week with rushed cereal, toasts and smoothie breakfasts  I want to make something special for my family and these little citrusy donuts are just the thing.

 

 

The sweet doughy smell mixed with the fresh zing of oranges wakes everybody up with a smile and I can see the delight in my husband and children’s faces as they come down and see these pretty donuts waiting for them for their breakfast. It really is the perfect start to the weekend. They are so unbelievably easy to make and take less then 30 minutes from beginning to end and are just perfect with coffee or  tea or milk for the kiddies.

 

 

These donuts are not sickly sweet but have a fresh zesty sweetness from the orange and the soft fluffy donuts have an interesting subtle crunchy texture from the chia seeds. Also, by adding the chia seeds these donuts are not just delicious but also have some goodness in them! Only downside is that I normally need to double the recipe as they really are moreish and within minutes they will be polished away! Treat your loved ones to a special weekend breakfast or brunch or just treat them anytime of the day with these yummy addictive zesty donut holes. They will thank you with big smiles on their faces!

 

ORANGE & CHIA RICOTTA DONUTS

Ingredients
  • Donuts:
  • 1 cup (250g) ricotta
  • 2 large eggs
  • 2 tbsp milk
  • 1 tsp vanilla paste
  • 1 tbsp orange zest
  • 1/3 cup (65g) granulated sugar
  • 1 ½ cups (185g) plain flour
  • 1 tsp bicarbonate of soda
  • ¼ tsp salt
  • 2 tbsp chia seeds
  • Vegetable oil for frying
  • Orange Icing Sugar:
  • 1 cup (125g) icing sugar
  • ½ tbsp orange zest
Directions
  • Step 1 Prepare the orange icing sugar: In a bowl mix the orange zest into the icing sugar and leave aside.
  • Step 2 Preheat enough oil to just cover the donuts at medium low heat. (Too hot and the donuts will remain raw on the inside – I always first fry test one donut to make sure I have the right oil temperature).
  • Step 3 In a large mixing bowl, whisk together the ricotta, eggs, milk, vanilla, orange zest and granulated sugar, until well blended.
  • Step 4 In a separate bowl combine the flour, bicarbonate of soda, salt and chia seeds.
  • Step 5 Add the dry ingredients into the wet mixture and thoroughly combine to make a soft wet dough.
  • Step 6 Lightly grease a plate or tray with oil.
  • Step 7 Coat hands lightly with oil and roll out 1 tbsp of mixture into a ball and place on greased plate / tray. Repeat until all of the dough has been used up.
  • Step 8 Fry the donuts in batches, approximately 5 to 8 minutes, until golden brown.
  • Step 9 Drain cooked donuts on paper towel.
  • Step 10 Once they are slightly cooled roll in bowl with orange icing sugar to fully coat.
  • Step 11 Best eaten on the day.
  • Step 12 Enjoy x
