Decadently rich & beautifully soft chocolate cake with a hint of coffee which is further intensified with a drizzle of deliciously aromatic coffee glaze.

Coffee for me is like a delicious cup of nectar that I NEED first thing in the morning and there are some mornings (especially Monday mornings) when I need a little extra pick me up. For me that is always chocolate in some form or another, and if it is in a form of a cake then it is a very beautiful morning indeed! I mean who is to say you can’t have cake in the morning? We can have muffins, so why not cake as a muffin is more or less a cake!

Now this cake is like the ultimate pick me up, its chocolate and coffee, I mean how it can it get better than that? It really is the most delicious perk me up you can have, anytime of the day really, but this time I decided to have a slice with my morning coffee and oh my what a beautiful morning it was!

This gorgeous cake is so deep and rich in bitter chocolate and coffeeness  that it is not very sweet and as there is no buttercream or frosting but is just topped with a drizzle of coffee glaze you can control how sweet you want it and so its perfectly acceptable to have any time of the day, as despite it being so decadent its quite light and so so fluffy. Well these are my reasonings and justifications for making cake acceptable at breakfast time! I have made this as a bundt cake, but you can make it as an ordinary round cake, a loaf or whatever shape you choose! You may need to make 2 lots if using a smaller loaf tin for example, but that just means you will have 2 lots of delicious cake to eat!

Ingredients
  • Cake:
  • 3 oz (85g) dark chocolate
  • 4 tbsp instant coffee mixed into 1 cup (250ml) boiling water
  • 2 ½ cups (500g) granulated sugar
  • 3 cups (390g) plain flour
  • 1 cup (100g) cocoa powder
  • 2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup (250ml) vegetable oil
  • 1 tsp vanilla paste
  • 1 cup (250ml) soured cream
  • Coffee Glaze:
  • 2 cups (250g) icing sugar
  • 1 tbsp instant coffee dissolved in ¼ cup (60ml) boiling water
Directions
  • Step 1 Make cake: Preheat oven to 160°C (320°F). Grease or line cake tin.
  • Step 2 Cut the chocolate into small pieces and add to the boiling coffee mixture and stir until all the chocolate has been dissolved.
  • Step 3 In a large bowl whisk together the sugar, flour, cocoa powder, bicarbonate of soda, baking powder and salt. Set aside.
  • Step 4 Using a stand mixer or hand mix, beat the eggs until pale and slightly thickened.
  • Step 5 Add the oil, vanilla and sour cream to the melted chocolate coffee mixture.
  • Step 6 Slowly pour into the beaten eggs and mix till fully incorporated.
  • Step 7 Add half of the flour mixture and beat till fully combined.
  • Step 8 Add the remaining flour mixture and beat till batter is smooth.
  • Step 9 Pour batter into the cake tin and bake for 40 – 55 minutes, until toothpick inserted in the centre comes out clean.
  • Step 10 Make glaze: Whilst whisking vigorously slowly add the coffee mixture to the icing sugar. Beat till smooth. Drizzle as much as desired over the cooled cake. You can also serve the remaining glaze to drizzle over individual slices.
