For a long time, I was against baked donuts, I just couldn’t get over how you could call them donuts as a donut had to ultimately be fried and, in all honesty, baked donuts taste almost like cake. But then again, they are not cakes! So, what are they?! I finally came to the realisation that I just needed to appreciate them for their own unique delicious characteristics.

Baked donuts are so quick & easy to make, no need for frying or using yeast and proofing. They are slightly cakey in taste and texture but lighter than a cake and not as sweet. They can be eaten just as they are, dusted in sugars or glazed and finished with sprinkles. They really should have their own category and not be compared to donuts.

These beautiful lemon poppy seed baked donuts are perfect for breakfast or brunch or as a quick treat with a cup of tea or coffee. They are deliciously light and have the most beautiful buttery taste with the zesty freshness of lemon. Best of all they are ready in under 30 minutes! Now you gotta love any donut that can be baked from scratch that quickly and taste so delicious!

Beautifully fluffy and buttery baked donuts that are infused with lemon zest and lightly glazed in a deliciously sweet and zesty lemon icing. Perfect for a delicious breakfast or when you need to whip up a quick treat.

Ingredients
  • Donuts:
  • 1 ½ cups (190g) plain flour
  • ½ cup (115g) caster sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp poppy seeds
  • 1 tbsp lemon zest
  • ¾ cup (170g) unsalted butter, melted
  • ¾ cup (180ml) milk
  • 1 large egg
  • ½ tsp vanilla paste
  • Oil for greasing
  • Glaze:
  • ¾ cup (170g) icing sugar
  • 1/8 cup (30ml) lemon juice
Directions
  • Step 1 Preheat oven to 175°C (350°F).
  • Step 2 In a large bowl thoroughly mix the flour, sugar, baking powder, salt, poppy seeds and lemon zest.
  • Step 3 Make a well in the centre and add the melted butter, milk, egg and vanilla. Whisk until fully combined and you have a smooth batter.
  • Step 4 Thoroughly grease the donut tin with oil.
  • Step 5 Fill each donut ring nearly all the way to the top. I like to transfer the batter into a piping bag and then easily pipe out the batter into the donut rings in the tin.
  • Step 6 Bake for 10 – 12 minutes, until donut completely set and golden and toothpick inserted comes out clean.
  • Step 7 Allow donuts to cool for 5 minutes in the tin and then take them out of the tin.
  • Step 8 Make glaze: Beat the icing sugar and lemon juice until you have a smooth consistency. Dip each cooled donut into the icing, shaking off the excess and allow to set. I like a very thin glaze on these donuts, but you can have a heavier glaze by increasing the icing sugar in the mixture.
  • Step 9 These donuts are best eaten on the day they are made.
