HERBY BULGUR SALAD WITH FETA & POMEGRANATE

An easy salad packed full of flavour and goodness. Delicious bulgur is combined with a trio of beautiful earthy herbs, dill, coriander and parsley with little crunchy bites of cucumber and red onion. You also get creamy salty bursts of feta and nutty pistachio all of which are coated in a sweet and tangy honey and pomegranate molasses dressing. Really is beautiful to look at and delicious to eat.

This is my favourite salad ever, like, ever ever. It really amazes me how something that is so healthy and full of goodness can taste lick the bowl clean yummy. When I make this, I make a big batch and happily eat this every day for the next few days. I actually look forward to the time of day when I will be sitting down to have this, it really is that delicious.

The earthy bulgur wheat absorbs all the sweet tangy pomegranate molasses dressing and the herby flavours of coriander, parsley and dill; and you get little crunchy bites of fresh cucumber and red onions. This all gets lightly coated with the creamy feta and is completed with sharp sweet bursts of pomegranate and nutty pistachios. I cannot express how much I love this salad, and I really hope that you love it too!

Delicious bulgur is combined with a trio of beautiful earthy herbs, dill, corriander and parsley with little crunchy bites of cucumber and red onion. You also get creamy salty bursts of feta and nutty pistachio all of which are coated in a sweet and tangy honey and pomegranate molasses dressing. Really is beautiful to look at and delicious to eat.

Ingredients
  • 1 ½ cups (335g) coarse bulgur wheat
  • 1 vegetable or chicken stock cube
  • 2 cups (500ml) boiling water
  • 1 cup (25g) parsley, sliced very finely
  • 1 cup (10g) dill, sliced very finely
  • ½ cup (25g) coriander, sliced very finely
  • 1 cup (150g) cucumber, finely diced
  • ¼ cup (40g) red onion, finely diced
  • 1 cup (150g) feta cheese, crumbled
  • 1 cup (180g) pomegranate seeds
  • ¼ cup (25g) pistachios, roughly chopped
  • Dressing:
  • 1/3 cup olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 ½ tbsp honey
  • 2 tbsp pomegranate molasses
  • ½ tsp garlic, finely crushed
Directions
  • Step 1 In a large microwavable bowl add the bulgur wheat and boiling water. Crush the stock cube in and then microwave on high for 8 to 10 minutes until all the water has been absorbed and bulgur wheat is soft and fluffy. Break up the bulger by stirring with a fork and leave to cool.
  • Step 2 Once the bulgur wheat has cooled add all the remaining ingredients and mix till fully combined.
  • Step 3 In a jar with a lid or in a bowl combine all the dressing ingredients. Give it a good shake if in a jar or whisk thoroughly if using a bowl.
  • Step 4 Pour the dressing over the bulgur wheat and mix until fully combined.
  • Step 5 Enjoy x
