I love mousses, they are so lusciously indulgent and satisfying, and best of all are such easy and impressive desserts to make for parties. Before my gorgeous kiddies I used to make mousses all the time, they used to always be some kind of mousse at my dinner parties, but since the kids  I have stopped making them due to the raw eggs needed in most mousse recipes as I don’t want to risk giving it to the kids. I mean I could make it for just the adults, but it felt so mean to make a delicious mousse, especially chocolate, and not give the kids any.

It was recently my son’s birthday party, can’t believe my gorgeous boy has turned 5 and for his superhero party I wanted to make a chocolate mousse as I knew the kids would love it, and so set out trying different recipes that did not involve raw eggs. However, without the egg whites to loosen and aerate the mousse, the mixture would tend to be very heavy. After a lot of trials, it turned out that with the simple addition of just plain old water the mousse would take on a completely different texture and become beautifully light and melt in your mouth delicious. The kids and adults loved the chocolate mousse and my little babies finally had tried a version of their mama’s mousse!

The week after a pregnant friend and her husband came for dinner at ours, and I made the same eggless chocolate mousse, but this time added some rose water and the combination was just divine. The mousse tasted like a decadent chocolate Turkish delight and greatest of all was so ridiculously quick and easy to make. So, if you want to make a mousse that is suitable for little kiddies and gorgeous mama’s to be or just want a quick and easy dessert that is just as impressive as it is delicious then this is the recipe for you!

Beautifully light & airy creamy chocolate mousse with subtle notes of floral rose. The most decadently indulgent treat ready in under 10 minutes.


  • ½ cup (100g) granulated sugar
  • ½ cup (125ml) water
  • 400g dark chocolate (or 300g dark chocolate & 100g milk chocolate for a sweeter milder chocolate taste)
  • 1/8 tsp salt
  • 2 tbsp rose water
  • 2 ½ cups (625ml) double cream
  • 1 tsp vanilla paste
  • Step 1 In a microwaveable bowl combine the sugar and water and microwave on high for 1 – 2 minutes until all of the sugar has dissolved.
  • Step 2 Add in the chocolate and keep stirring until it has fully melted. If the chocolate is not melting microwave for further 30 seconds – 1 minute until fully melted.
  • Step 3 Stir in the salt and rose water and mix until fully combined. Set aside to cool.
  • Step 4 In a large bowl add the cream and vanilla and whisk until soft peaks have formed. Really important not to over beat or mousse will split. Cream mixture should be soft like shaving foam.
  • Step 5 Gently fold in the chocolate mixture into the cream, mixing until fully combined taking care to not overbeat and loose the air from the mixture.
  • Step 6 Divide mixture into the desired serving bowls or glasses. Can serve immediately or refrigerate until required. Ensure to take the mousse out of the fridge at least 15 minutes before serving to bring it to room temperature.

  • I made this it was really good. However, I made the mistake of putting the chocolate mixture in the fridge. The cocoa butter tried to separate out and only adding hot water to it would bring it back together again.

    • So happy you liked the mousse. Its fine to refrigerate the actual mousse but the chocolate is best left to cool down at room temperature, so glad you were able to rescue the chocolate mixture! x
