In my family we all adore crepes and it is our weekend breakfast. It’s amazing as to how many different ways there are to eat these beautiful circles of yum! Just in my little family we each have our own way of devouring our delicious crepes. My daughter will slather Nutella all over her crepes, roll them up, slice them up and then enjoy her little crepe bites. My son absolutely loves maple syrup, so he drizzles his crepes with his beloved maple syrup, rolls up his crepes and munches away. My dearest hubbie goes 2 ways, some days he has his crepes with Nutella and sliced bananas or on other days has his crepes with both Nutella and peanut butter. He likes to fold his crepes into triangles, and in 3 bites each crepe is gone! As for me, I like it simply with a sprinkle of granulated sugar and a drizzle of lemon juice, but the most important thing, my crepes must remain open, for some bizarre reason, I just can’t eat it if it is rolled or folded!

For a long time, I used to just guesstimate the quantities to make my crepe batter, and not surprisingly I would always get different results. I guess I just didn’t think that for something as simple as crepes that I needed exact measurements. Oh, how wrong was I! After having experimented a little with different measurements and ingredients I am so happy to say that I have the perfect crepes recipe. I know it’s a big statement to make, but these crepes deserve it. I have now made this recipe nearly every weekend for the past 2 years and each and every time it is the same, the most perfect crepes I have ever had. They are not eggy (I really really dislike eggy crepes), slightly crisp on the edges, beautifully soft and most amazing of all full of so much flavour! With this recipe your greatest concern will be deciding on how to eat your perfect crepes and not how to make them!

Ingredients
  • 1 cup (130g) plain flour
  • 2 tbsp granulated sugar
  • 1/8 tsp salt
  • 1 1/3 cup (310ml) milk
  • ½ tsp vanilla paste
  • 2 large eggs
  • 3 tbsp butter, melted
  • Oil for lightly greasing pan
Directions
  • Step 1 In a large bowl combine the flour, sugar and salt.
  • Step 2 In another bowl combine the milk, vanilla, eggs and butter. Whisk till fully combined.
  • Step 3 Whilst whisking, slowly pour the milk mixture into the flour mixture. Beat until fully combined. Leave to rest for at least 10 minutes.
  • Step 4 Heat a 24cm (9.4”) non-stick pan to medium heat. Using a kitchen paper lightly grease the pan with oil. Do this before you pour the batter for each crepe.
  • Step 5 Pour just under 1/3 cup (65ml) batter into the pan and immediately gently tilt the pan so that the batter covers the whole pan in a thin layer.
  • Step 6 Cook until the crepe has set, and edges start to crisp and brown, approximately 1 – 2 minutes.
  • Step 7 Flip and cook the other side for approximately 30 seconds
  • Step 8 Serve immediately and eat as desired!
