Beautifully moist and fluffy cake that is bursting with beautiful coffee flavour with a deliciously luxurious and velvety coffee and mascarpone buttercream frosting. A must for any coffee fan.

I am not one for new year’s resolutions, as I never keep them, I mean no one ever keeps them, and so instead I like to focus on all the happy and beautiful experiences and moments that have passed my family and I in the past year. One of the biggest things for my family in 2018 was my gorgeous son starting school, and my little princess starting nursery. Trust me this mama shed a lota happy proud tears and must have taken over a 1000 pictures of my 2 beautiful munchkins in their uniforms! As a result of my 2 babies growing up, I found myself, after 5 years of just being mama all day long (and sometimes all through the night!) having some time to myself. At first, I really did not know what to do with myself, I had forgotten how to just be me, Faiza, and not mama.

With my new-found free time I was able to do something that I never thought I would. I started my beautiful chilli and cakes blog. Never had I thought at the beginning of the year that I would be doing this, and I am so blessed and thankful at all the support, kindness and love I have received from each and every one of you who follow my blog and use my recipes; like, comment or follow me on Insta and on Facebook. I remember when I first started telling my hubbie that even if I got 10 likes it would make my day as it would mean there are some people who like what I am doing, and I still can not believe how many of you kinda like my stuff! Really, really means the world to me and I wanted to thank each and every one of you as because of you I have found myself again and I am forever grateful. Beautifully moist and fluffy cake that is bursting with beautiful coffee flavour with a deliciously luxurious and velvety coffee and mascarpone buttercream frosting. A must for any coffee fan.

Ingredients
  • Cake:
  • 1 cup (200g) brown sugar
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 3 ½ cups (440g) plain flour
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ¼ tsp salt
  • 1 ½ cups (375ml) milk
  • 3-4 tsp instant espresso or 5-6 tsp instant coffee
  • ¾ cup (180ml) vegetable oil
  • 2 tsp coffee essence
  • 1 tsp vanilla paste
  • Buttercream:
  • 4 ½ cups (560g) icing sugar
  • 1 cup (230g) unsalted butter
  • 1 cup (250g) mascarpone
  • 2 tbsp milk
  • 2 tsp instant espresso or 4 tsp instant coffee
  • 2 tsp coffee essence
  • 1 tsp vanilla paste
Directions
  • Step 1 Preheat oven to 175°C (350°F). Line 3 8 inch cake tins with baking paper.
  • Step 2 Using a stand mixer or hand mixer, beat the sugar and eggs until creamy and pale in colour.
  • Step 3 In a separate bowl combine the flour, baking powder, bicarbonate of soda and salt.
  • Step 4 Heat ½ cup (125ml) of the milk in the microwave for 30 seconds to 1 minute. Stir the coffee into the warm milk. Once fully dissolved add the remaining 1 cup (250ml) milk, oil, coffee essence and vanilla paste.
  • Step 5 To the egg sugar mixture add half the dry flour mixture and half of the wet milk mixture and beat until just combined.
  • Step 6 Add the remaining dry mixture and wet mixture and beat for just a few seconds. Use a spatula to gently fold the batter until just combined. (If you beat the batter too much at this stage the cake will be dense. It is ok to have a few lumps in the batter).
  • Step 7 Divide the batter evenly into the 3 prepared tins.
  • Step 8 Bake for 25 – 30 mins until golden and toothpick inserted in the centre comes out clean.
  • Step 9 Allow cakes to cool in the tins whilst you make the buttercream.
  • Step 10 Make Buttercream: Using the paddle attachment in the mixing stand beat the icing sugar and butter until creamy and fluffy.
  • Step 11 Add the mascarpone and beat until fully combined.
  • Step 12 Heat the milk in the microwave for 20-30 seconds. Stir in the coffee into the warm milk. Once dissolved and to the frosting mixture. Also add the coffee essence and vanilla paste. Beat for at least 3-5 minutes until frosting is fluffy.
  • Step 13 Either pipe or spread the frosting between each cake layer and decorate as desired.
  • Step 14 Enjoy x

  • Can you please tell me what coffee essence is? Also, what is the difference between vanilla paste and vanilla essence? Thanks alot!

    • Hi Sana, coffee essence is basically a form of concentrated coffee to give a deeper coffee flavour, similar to vanilla essence/extract. If you can’t find coffee essence you can just add 1 – 2 tsp extra of instant coffee mixed in a little water, depending on how strong you like your coffee flavour. Vanilla essence is basically the liquid form of vanilla flavouring/extract whereas the paste is a a thick black paste and is a combination of vanilla pod seeds and vanilla extract, so it is a lot more stronger in flavour and you also get the beautiful vanilla specks. Its one of my favourite ingredients to use in bakes. Hope this helps x
