CINNAMON SPICED PUMPKIN DONUTS

Unbelievably quick and super easy pumpkin donut holes that are beautifully moist and fluffy in the centre and have a deliciously crisp chewy outer that is covered in a velvety cinnamon sugar coating.

 

These little balls of cinnamony pumpkin delight were created as a result of some left over pumpkin puree that I had after making my Chai Pumpkin Pie. Now my husband and both my children really dislike pumpkin and I knew they wouldn’t eat anything pumpkin related, but stubborn me wanted them to like pumpkin, and I was determined to use up the leftover pumpkin puree in a way that they would not know it was pumpkin and hopefully enjoy it. So, what came into my devious mind? Donuts, everyone loves donuts, and I must say these donuts were a big hit, no one even realised it had pumpkin and within minutes they were all gone.

 

 

The pumpkin flavour is subtle through these moreish donut holes, the pumpkin provides an underlying sweet earthiness, and when the hot donuts are rolled in a bowl full of the cinnamon sugar it almost forms a velvety sugary crust and when you take your first bite you can not help but be amazed at the beautiful vibrant orange colour that you discover. Considering how easy these are to make, the taste is truly amazing. Furthermore, they are vegan friendly and are perfect for a delicious autumn  breakfast or brunch, quick snack with a cup of tea or coffee or even as a quick dessert, just be prepared to make a double batch of these as they really do disappear very very quickly!

Ingredients
  • Donut:
  • 1 ¼ cup (280g) pumpkin puree
  • 1 cup (120g) plain flour
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 ½ tbsp caster sugar
  • Oil for frying & lightly greasing hands
  • Cinnamon Sugar:
  • ½ cup (60g) icing sugar
  • 1 ½ tsp cinnamon powder
Directions
  • Step 1 Combine all of the donut ingredients together and mix thoroughly until you have a smooth soft dough / batter (mixture will be somewhere in between a dough and a batter).
  • Step 2 In a separate bowl combine the cinnamon sugar ingredients and set aside.
  • Step 3 With oil, lightly grease a plate, your hands and a tablespoon. Measure out 1 tablespoon of the donut mixture and quickly roll into a ball in your hands and place on greased plate. Repeat until all the donut mixture has been used up, regularly re-greasing hands and tablespoon (donut mixture is very sticky and without greasing will be very hard to work with).
  • Step 4 Heat enough oil in a pan to fully cover the donuts. Fry donuts in batches on a medium low heat for approximately 6 – 8 minutes, until deep golden brown and donut is fully cooked through. (I always initially fry a tester donut and use that to adjust the heat and cook time accordingly).
  • Step 5 Drain cooked donuts on kitchen paper, and whilst sill hot drop the donuts into the cinnamon sugar, rolling it around until fully coated, and remove. Repeat with all cooked donuts.
  • Step 6 Leave to cool completely before eating and these donuts are best eaten on the same day as they are prepared.
  • Step 7 Enjoy x
