CHOCOLATE PANCAKES WITH PEANUT BUTTER GLAZE

Deliciously soft and fluffy chocolate pancakes drizzled with an almost caramel like peanut butter glaze. This is what breakfast dreams are made of!

Chocolate and peanut butter is like a match made in heaven and for a while I have been dreaming about these pancakes, and after a few failed attempts I finally managed to perfect the recipe. It is really important not to over mix the batter, having some lumps is fine and also to allow the batter to rest as that is how you will get the fluffiest pancakes ever!

I wanted light fluffy pancakes that just melt in your mouth and these little beauties do just that. The peanut butter glaze is dangerously delicious, and you will have to control yourself majorly not to just keep eating spoonful after spoonful! Drizzled on top of these delicious pancakes this beautiful breakfast or brunch treat is just pure heaven!!

Ingredients
  • Pancakes:
  • 2 cups plain flour
  • ¾ cup granulated sugar
  • ½ tsp salt
  • 1 ½ tbsp baking powder
  • 1/3 cup cocoa powder
  • ¾ cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup milk
  • Oil for greasing
  • Peanut Butter Glaze:
  • 1 cup icing sugar
  • ½ cup peanut butter
  • 6 tbsp milk
Directions
  • Step 1 Mix flour, sugar, salt, baking powder and cocoa.
  • Step 2 In a separate bowl combine the butter, buttermilk, eggs and milk, mixing until thoroughly combined.
  • Step 3 Pour the wet ingredients into the dry ingredients and stir till just combined (do not overmix, or pancakes will not be fluffy). Batter will be thick and lumpy. Leave the batter to rest for at least 10 minutes. (If you skip this stage pancakes will not be fluffy).
  • Step 4 In the meantime, prepare the glaze: Combine all of the glaze ingredients together and whisk till all incorporated. I like my glaze to be a bit on the thicker side but if you prefer it to be runnier, add more milk, 1 tablespoon at a time.
  • Step 5 Coat a non-stick pan lightly with oil and heat over low medium.
  • Step 6 Using a 1/3 cup measure scoop out some batter and drop into the pan. Cook until bubbles start to form on the top (2-3 minutes), and then flip over to the other side and cook for another 1-2 minutes. Repeat with remaining batter.
  • Step 7 Serve pancakes with a drizzle of the peanut butter glaze and fruit if desired.
