Just looking at this majestic pudding it would be fair to think it is full of sugar and god knows how many calories as something that looks so scrumptiously delicious can’t possibly be good for you, can it?! Well, this heavenly concoction is so so so good for you and wait for it, has no sugars, no dairy, is gluten free and is healthy enough to be a delicious breakfast and sweet and decadent enough to even be a dessert! Imagine you can have chocolate pudding and ice-cream for breakfast!! Now that is the dream!! Creamy, rich mousse like chocolate and hazelnut chia puddings are layered with chocolatey crunchy cacao nibs and nutty toasted hazelnuts and finished off with a scoop of luxuriously smooth nice-cream, which is the healthiest ice-cream you will ever have consisting of just bananas and hazelnut milk.

 

 

I am a big fan of chia seeds and think there really is something magical about how these tiny seeds once in liquid expand into pearls of yumminess. Chia seeds are bursting with omega 3 fatty acids as well as antioxidants and minerals, like calcium, they are also high in protein and are a natural anti-inflammatory. If that is not enough to scream healthy the cacao nibs in this yummy treat also provide some amazing health benefits. Cacao nibs are the raw, pure form of chocolate and are basically bits of cacao beans. These rich crunchy bits of chocolate help to improve your mood, increase your energy and decrease your appetite and overall give a feeling of well-being and satisfaction. Need I say more, a healthy luxuriously decadent pudding with ice-cream! Seriously what are you waiting for?! It’s almost as if the Doctor has prescribed this, that is how good it is for you!

Ingredients
  • Chocolate Chia Pudding:
  • 1 cup (240ml) hazelnut milk
  • 1 tbsp maple syrup (adjust sweetness to taste)
  • ½ tsp vanilla paste
  • 1 tbsp cocoa powder
  • 4 tbsp chia seeds
  • Hazelnut Chia Pudding:
  • 1 cup (240ml) hazelnut milk
  • 1 tbsp maple syrup (adjust sweetness to taste)
  • ½ tsp vanilla paste
  • 4 tbsp chia seeds
  • 1 tbsp crushed toasted hazelnuts
  • Nice-Cream:
  • 2 bananas, chopped & frozen
  • ¼ cup (60ml) hazelnut milk
  • To Serve:
  • Sprinkle of cocoa nibs & crushed toasted hazelnuts
Directions
  • Step 1 Make chocolate chia pudding: To a jar or container with a lid add milk, maple syrup, vanilla and cocoa. Using a whisk or fork, stir vigorously until cocoa powder is well combined.
  • Step 2 Add the chia seeds. Whisk or stir well. Leave for 5 minutes.
  • Step 3 Whisk well or stir vigorously once again (this is to avoid lumps).
  • Step 4 Refrigerate for at least 5 hours or overnight.
  • Step 5 Make hazelnut chia pudding: : To a jar or container with a lid add milk, maple syrup and vanilla. Mix well.
  • Step 6 Then add chia and crushed hazelnuts. Whisk well or stir vigorously with a fork. Leave for 5 minutes and then give another vigorous whisk or stir.
  • Step 7 Refrigerate for at least 5 hours or overnight.
  • Step 8 Make nice-cream: Place frozen banana chunks into a food processor and begin to process. Add hazelnut milk and continue processing. You can add more milk depending on desired texture and the type of food processor you are using.
  • Step 9 If eaten immediately the nice-cream will have a soft serve consistency, but for scoops place in a sealed container and freeze for 30 minutes to an hour.
  • Step 10 When ready to eat, whisk or stir both chia puddings again.
  • Step 11 You can either serve both chia puddings in a bowl with a scoop of nice-cream on top or layer the puddings in a jar as I have and finish off with a scoop of nice-cream
  • Step 12 Serve with a sprinkle of cocoa nibs and crushed toasted hazelnuts.
  • Step 13 Enjoy x
