There are certain bakes that every person will make at least once in their lives, and a chocolate cupcake is high on the list. Chocolate cupcakes are a must in  life, certainly in mine.

Every celebration, birthday party, charity bakes, school bake sales have always included a chocolate cupcake in one form or another as surprisingly they are one of the easiest and most fool proof cupcakes you can make, as long as you have the perfect recipe.

For me this is the most perfect recipe for these beautifully indulgent little cakes and is the one recipe that I have been using for over 20 years as once I had tweaked and perfected it there was no need to change even a gram on this recipe because each and every time I would get the most beautifully soft and fluffy cupcakes that are deep and rich in chocolate flavour. It really is important to use high quality chocolate and cocoa for the best results. I always use Callebaut chocolate callets and cocoa powder.

I leave the cupcake recipe untouched but do like to play around with different frosting combinations, as the choice is endless. In this recipe I am showcasing these perfect chocolate cupcakes with a frosting that is equally decadent and rich, my chocolate fudge frosting. It is so deliciously good that you will not be able to stop yourself from repeatedly tasting this fudgy chocolaty frosting and before you know it nearly half of the frosting will be gone! I will not confess to how many times that has happened to me!!

Ingredients
  • Chocolate Cupcakes:
  • 85g (3oz) milk chocolate
  • 55g (2oz) dark chocolate
  • 1 tsp instant coffee
  • 1 ½ cup (355ml) boiling water
  • 2.5 cups (500g) granulated sugar
  • 2.5 cups (337g) plain flour
  • 1.5 cups (170g) cocoa powder
  • 2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup (240ml) oil
  • 1 cup (240ml) buttermilk
  • 1 tbsp vanilla paste
  • Fudge Frosting:
  • ¾ cup (170g) unsalted butter
  • 2 cups (350g) dark chocolate chips
  • Pinch of salt
  • ½ tsp vanilla paste
  • 5 cups (625g) icing sugar
  • ½ cup (120ml) milk
Directions
  • Step 1 Make Cupcakes: Preheat oven to 160°C (320°F). Line cupcake tins with paper cups.
  • Step 2 Combine the two chocolates with the instant coffee and pour the boiling water on top. Stir until fully melted. Leave to cool.
  • Step 3 In a large bowl whisk together sugar, flour, cocoa, bicarbonate of soda, baking powder and salt. Set aside.
  • Step 4 Using a stand mixer beat the eggs until mixture thickens and becomes pale yellow.
  • Step 5 Pour in the melted chocolate mixture, oil, buttermilk and vanilla. Mix until fully combined.
  • Step 6 Add in the flour mixture in two parts, beating until it is fully combined.
  • Step 7 Pour batter into prepared tins filling only half way up the paper cup. Do not over fill as cupcakes rise quite a bit whilst baking.
  • Step 8 Bake for 25 – 30 minutes, until a toothpick inserted into the centre of a cupcake comes out clean.
  • Step 9 Prepare Fudge Frosting: Microwave chocolate and butter together, on high, in 30 second intervals, stirring after each, until the chocolate has melted, and mixture is smooth.
  • Step 10 Stir in the salt and vanilla.
  • Step 11 Add the icing sugar to the bowl of the stand mixer, and whilst beating on low, slowly pour in the melted chocolate mixture.
  • Step 12 Slowly pour in the milk, stopping as soon as the frosting becomes smooth (you may need less than ½ a cup – add more or less depending on how thick you want the frosting).
  • Step 13 Once cupcakes have cooled, spread or pipe the fudge frosting.
  • Step 14 Enjoy x
