These beautiful holiday cookies are perfect to bake with the kiddies as long as you can stop them from eating up all the candy canes and marshmallows that go in these scrumptious cookies! Deliciously crisp yet soft chocolate sugar cookies that have a hidden melted chewy marshmallow under beautifully glossy chocolate ganache that is covered with a pepperminty sprinkle of crunchy crushed candy canes.

Since becoming a mummy, Christmas is all about my kiddies. It is all about making it magical and special for them and now that my son is at school and daughter is at nursery, it is also about how to keep them entertained over the LONG Christmas holidays (3 ½ weeks!!) whilst keeping myself and my husband sane!

One of the things both my kids and I love to do is baking especially making special Christmas bakes like cookies. This is a really lovely recipe to make with the young ones as it is fairly straight forward and most importantly you always end up with the most delicious cookies. I mean this is like a child’s chocolate Christmas dream, beautifully soft and slightly crisp chocolate sugar cookies that are so rich in chocolate butteryness covered in decadent glossy chocolate ganache that is hiding a deliciously chewy toasted marshmallow and covered in a sprinkling of crushed candy canes. It’s as if Willy Wonka himself created these beautiful holiday cookies!

These beautiful holiday cookies are perfect to bake with the kiddies as long as you can stop them from eating up all the candy canes and marshmallows that go in these scrumptious cookies! Deliciously crisp yet soft chocolate sugar cookies that have a hidden melted chewy marshmallow under beautifully glossy chocolate ganache that is covered with a pepperminty sprinkle of crunchy crushed candy canes.

Ingredients
  • Chocolate Sugar Cookies:
  • 1 cup (230g) unsalted butter
  • 1 ½ cup (300g) granulated sugar
  • 2 tsp vanilla paste
  • 2 large eggs
  • 3 cups (390g) plain flour
  • ¾ cup (75g) cocoa powder
  • 1tsp baking powder
  • ½ tsp salt
  • Chocolate Ganache:
  • 1 cup (180g) dark chocolate chips / pieces
  • ½ cup (120ml) double cream
  • 2 tbsp corn syrup
  • Topping:
  • 35-40 marshmallows
  • 6 candy canes, crushed
Directions
  • Step 1 Using a stand mixer with a paddle attachment or a hand mixer beat the butter until smooth and creamy.
  • Step 2 Add the sugar and beat till fluffy.
  • Step 3 Add the vanilla and eggs and beat till fully combined.
  • Step 4 In a separate bowl lightly whisk together the flour, cocoa, baking powder and salt. (I find that if you gently beat with a hand whisk you do no need to sift the dry ingredients).
  • Step 5 With the mixer on low speed, slowly add the dry ingredients to the wet mixture. Beat until fully combined and you have a soft dough.
  • Step 6 Divide the dough into 2 balls, cover with cling film and refrigerate for at least 45 minutes.
  • Step 7 Once chilled, preheat the oven to 190°C (375°F) and line a couple of baking trays with baking paper.
  • Step 8 Roll the cookie dough so that is approximately 1 cm thick and using your desired cookie cutters cut out the cookies and place on prepared baking trays.
  • Step 9 Re- roll the remaining dough and continue cutting until it is all used up.
  • Step 10 Bake for 8-10 minutes, cookies will still appear soft but will harden upon cooling. Allow to cool on baking trays.
  • Step 11 Once cooled, place a marshmallow in the centre of each cookie and place under a hot grill for approximately 30 seconds to 1 minute, until the marshmallow starts to just melt so that it sticks to the cookie. (You do not want to completely melt the marshmallow).
  • Step 12 Make Chocolate Ganache: Combine all 3 ingredient and microwave on high for 30 seconds bursts, stirring in between each until chocolate has fully melted. Stir till fully combined and glossy.
  • Step 13 On each cookie cover the marshmallow with some chocolate ganache and a sprinkling of crushed candy cane. Allow chocolate ganache to fully set but can be eaten immediately for a fudgy gooey ganache topping!
