Deliciously soft and chewy with slight crisp edges, these golden cookies are beautifully earthy with oats and a touch caramelly from the brown sugar with bursts of warm sweet cinnamon. These cookies are pure delicious yumminess.

If you were to ask me what were my favourite cookies I would say oatmeal and raisin with the raisins picked out! My love for these cookies started from my days at college where surprisingly they used to have the most deliciously chewy cinnamonny oatmeal cookies. You would always find a pile of raisins in front of me whenever I used to be in the college canteen, sitting munching away at my cookies whilst removing each and every single raisin from them! Not a day would go by where I wouldn’t buy my cookies! Ah, the joys of being young and having a fast metabolism!

 

The only thing I dislike about  oatmeal and raisin cookies are  the slimy raisins. I have tried to like raisins in cookies but for some reason it is just not palatable to me and since my college days you will always find a pile of raisins in front of me whenever I am eating my favourite cookies.

You may be wondering why does she not just have plain oatmeal cookies?! Well to this day (until these glorious cookies) I have found plain oatmeal cookies to be dry and lacking that soft chewiness that I so adore which I guess comes as a result of baking the cookies with raisins.

 

For such a long time I have been trying to recreate what I  love about oatmeal cookies sans raisins and I am so happy to finally have captured it all in these scrumptious cookies. I can now happily say my favourite cookies are plain oatmeal cookies and I no longer have piles of raisins left in front of me whenever I decide to eat  my favourite cookies!

Deliciously soft and chewy with slight crisp edges, these golden cookies are beautifully earthy with oats and a touch caramelly from the brown sugar with bursts of warm sweet cinnamon. These cookies are pure delicious yumminess.

Ingredients
  • 1 cup (230g) unsalted butter
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar
  • 1 large egg
  • 1 ½ cups (190g) plain flour
  • 1 tsp cinnamon
  • 1 tsp vanilla paste
  • 1 tsp bicarbonate of soda
  • ¼ tsp salt
  • 1 ½ cups (135g) quick cooking oats
Directions
  • Step 1 Preheat oven to 175°C (350°F). Line baking tray with baking paper and set aside.
  • Step 2 Either using a stand mixer or hand mixer beat the butter with both sugars until light and creamy.
  • Step 3 Beat in egg until thoroughly combined.
  • Step 4 Add flour, cinnamon, vanilla, bicarbonate of soda and salt. Beat until dough starts to come together.
  • Step 5 Pour in the oats and beat till fully combined.
  • Step 6 Scoop out approximately 1 ½ tbsp of cookie dough, shape into a ball and place on baking tray, flatten gently either with your palm or bottom of a glass. Allow enough space between each cookie for spreading.
  • Step 7 Bake for 8 – 10 minutes until cookie slightly golden. Cookies will still be soft and will break if you remove from the baking tray straight away. Allow to cool on baking tray for 5 – 8 minutes, cookies will have started to harden. Remove from tray and allow to cool completely.
  • Step 8 Enjoy! x
