BROWNIE COFFEE PARFAIT

Deliciously decadent parfait consisting of layers of chewy fudgy brownie, silky indulgent coffee mousse and beautifully velvety vanilla bean cream.

 

I really enjoy inviting friends and family over for dinner, but this can be difficult especially with 2 little kiddies running around the house wanting their mama’s attention. After several failed dinners of late food served after 11pm because a certain young lady wanted every single nursery song she ever heard sung to her before she went to sleep, or because of a certain young man waking up every 20 minutes for a cuddle, things just never go to plan.

 

 

I have had beautiful dinners burnt to a crisp because of my daughter who is potty training wanting to hold my hand whilst she attempted a poo poo for over 20 minutes and refusing to let me go! You get the picture, juggling dinner parties and 2 little ones can be very  difficult, and sometimes near impossible. But what I have learnt the hard way is to keep things simple, and make as much as you can before hand, and sometimes you can host the perfect dinner and still be a good mama!

 

 

Little gems like this delicious parfait are perfect for busy mamas like me. These gorgeous desserts can be made the night before in under 20 minutes and are ready to serve when you are and taste like you have spent hours creating them. The classic combination of chocolate, coffee and cream is sinfully luscious, but the even greater sin is jut how easy thy are to make and how impressive they look!

 

 

BROWNIE COFFEE PARFAIT

Deliciously decadent parfait consisting of layers of chewy fudgy brownie, silky indulgent coffee mousse and beautifully velvety vanilla bean cream.

Ingredients
  • 8 slices either homemade or shop bought chocolate brownies
  • Coffee Mousse:
  • 1 14oz (397g) tin condensed milk
  • 2 tbsp instant coffee dissolved in 2 tbsp boiling water
  • 1 cup double cream
  • Vanilla Bean Cream:
  • 1 cup double cream
  • 1/3 cup mascarpone
  • 1 tbsp vanilla bean paste
  • 4 tbsp icing sugar
  • Cocoa powder for dusting
Directions
  • Step 1 Roughly crumble 2 brownies per serving glass or jar.
  • Step 2 Make Coffee Mousse: Stir the dissolved coffee into the condensed milk.
  • Step 3 Pour in the double cream and using a hand mixer, whisk until the mixture has thickened but is still fluffy and light.
  • Step 4 Spoon the coffee mousse over the crumbled brownies in the jar.
  • Step 5 Make Vanilla Bean Cream: In a bowl combine the double cream, mascarpone, vanilla and sugar and beat with a hand mixer until thick. Either spoon on top of the coffee mousse or pipe in a swirl.
  • Step 6 Refrigerate for at least 2 hours or until required.
  • Step 7 Dust with cocoa powder before serving.
  • Step 8 Enjoy x
