BANANA PECAN STREUSEL MUFFINS

These muffins are bursting with sweet banana flavour and are soft and fluffy on the inside and crispy and crunchy on the top with a cinnamon spiced buttery pecan streusel. This is not your ordinary banana muffin but a very very special banana muffin!

 

We are a family who love our banana muffins. Most people will make banana muffins or banana breads because they have ripe bananas that they need to use up, well I actually buy an extra bunch of bananas to ripen specially to bake with. I just adore the heavenly warmth and sweet aroma of freshly baked banana muffins. Banana muffins are perfect for breakfast, snack with your tea or coffee, after school / work snack or a quick dessert. They are basically perfect anytime during the day and in our household,   we do eat it a lot, and I am always trying out different variations of the humble banana muffin. Who would have known with the addition of a simple streusel the muffin would elevate to super gorgeous status (my son’s description of these muffins!)

 

 

The actual muffin is  soft and moist, bursting with banana flavour as well as a subtle hint of cinnamon. This is the official favourite spice in my family, so I do use it a lot! The muffins are topped with a buttery streusel consisting of spicy sweet cinnamon, earthy oats and crunchy pecans. This bakes to a golden crumb and each mouthful of muffin is first a burst of spiced nutty crunch followed by moist cakey banana goodness. These really are extra special banana muffins that are so easy and quick to make and are sure to become one of your favourite muffin recipes.

These muffins are bursting with sweet banana flavour and are soft and fluffy on the inside and crispy and crunchy on the top with a cinnamon spiced buttery pecan streusel. This is not your ordinary banana muffin but a very very special banana muffin!

Ingredients
  • 1 3/4 cups (220g) plain flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 ½ cups (4 large) ripe bananas mashed
  • 2/3 cup (135g) granulated sugar
  • 1/3 cup (65g) brown sugar
  • 2 eggs
  • 1 tsp vanilla paste
  • 1/2 cup (115g) melted butter
  • 3 tbsp oil
  • Pecan Streusel:
  • 1/3 cup (65g) brown sugar packed
  • 2 tbsp flour
  • 4 tbsp unsalted butter
  • 4 tbsp oats
  • 1 tsp cinnamon
  • 1/3 cup chopped pecans
Directions
  • Step 1 Preheat oven to 180°C (355°F). Line a pan with muffin liners.
  • Step 2 Combine flour, cinnamon, baking soda, baking powder, and salt in a large bowl.
  • Step 3 In a separate bowl, mix together mashed bananas, sugar, egg, vanilla, butter and oil.
  • Step 4 Add in flour mixture and stir just until combined (do not overmix).
  • Step 5 Divide batter into the muffin paper liners, filling each approximately half way up.
  • Step 6 Make Streusel: In a bowl combine brown sugar, flour, butter, oats and cinnamon until mixed.
  • Step 7 Stir in pecans.
  • Step 8 Divide topping over muffins.
  • Step 9 Bake 18-20 minutes or until a toothpick comes out clean.
