BANANA CARDAMOM UPSIDE DOWN CAKE

Beautifully soft banana cake topped with caramelised bananas covered in a deliciously toffee like caramel that is infused with sweet earthy notes of cardamom.

We love banana bread in our house and it is something I make all the time. Its so quick to make and just so comfortingly delicious. However, I was in the mood for something a bit special, so imagine the deliciousness of banana bread combined with the lusciousness of beautiful toffee like caramel and the fragrant earthy notes of cardamom. This is what this cake is! Its basically an extra special banana bread and is such a delicious treat.

I am a little obsessed with cardamom at the moment and have been adding it into everything, green tea, Turkish coffee and in my bakes. The aroma is just so warming and earthy sweet and really transforms everything to make it that little bit special. So of course, when I was making this cake I couldn’t help but add it into the cake batter as well as in the caramel. The warm cardamom earthiness combined with the slightly salty sweet caramel is just such a beautiful match and then when you also add bananas into the equation, its just so stunningly delicious. Beautifully soft banana cake topped with caramelised bananas covered in a deliciously toffee like caramel that is infused with sweet earthy notes of cardamom.

Ingredients
  • Topping:
  • ¼ cup (60g) unsalted butter
  • ¾ cup (170g) brown sugar
  • ½ tsp salt
  • ½ tsp cardamom powder
  • 2 bananas, cut into slices
  • Cake:
  • ½ cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • ½ cup (120g) sour cream
  • 2 cups (240g) plain flour
  • 1 tsp bicarbonate of soda
  • ½ tsp – 1 tsp cardamom powder (adjust to your preference)
  • 1 tsp vanilla paste
  • 2 cups (approximately 3) bananas, mashed
Directions
  • Step 1 Make Topping: In a microwaveable bowl combine all the topping ingredients except for the bananas and microwave on high in 30 second bursts until butter has fully melted and sugar just starts to caramelise.
  • Step 2 Preheat oven to 175°C (350°F) and lightly grease with oil a 20cm (8 inch) springform cake tin.
  • Step 3 Pour the caramel into the cake tin, making sure it is evenly spared throughout.
  • Step 4 Arrange the banana slices on top of the caramel.
  • Step 5 Make Cake Batter: Cream the butter and sugar until light and fluffy.
  • Step 6 Beat in one egg at a time.
  • Step 7 Pour in the sour cream, mixing till fully combined.
  • Step 8 Add the flour, bicarbonate of soda and cardamom, beating until just combined. (Careful not to overbeat or cake will be dense).
  • Step 9 Using a spatula fold in the vanilla and mashed bananas, taking care not to overmix.
  • Step 10 Pour the cake batter into the cake tin, on top of the arranged banana slices.
  • Step 11 Bake for 45 minutes – 1 hour, until toothpick inserted into the centre comes out clean.
  • Step 12 Allow cake to cool completely in the tin.
  • Step 13 Run a knife around the edge of the cake to loosen from the tin, and gently warm the bottom of the cake tin by holding over a hot hob. Turn the cake tin over and release the springform allowing the cake to fall out with the sliced bananas and caramel on top.
