Baked Feta Cheese Rolls with Zaatar & Honey

Crispy golden phyllo rolls oozing with creamy white salty feta cheese speckled with green specks of aromatic parsley and zaatar,  finished with a drizzle of sweet floral honey and earthy zaatar. A stunningly delicious appetiser or snack.

 

The blessed month of Ramadan has started, and many all over the world for this whole month will be waking up early just before sunrise to have their breakfasts and will not eat or drink until sunset. The fast will be broken with a beautifully delicious spread of treats that are specially saved for Ramadan each year. Today I would like to share one of my favourite Ramadan recipes, which makes for a very pretty appetiser or snack, and instead of frying, these stunning feta rolls are baked, making them healthier and less likely to burst. These crispy phyllo rolls are an explosion of flavour with salty creamy feta combined with earthy fresh parsley and zaatar, drizzled with sticky sweet honey to cut through the creamy saltiness and a further sprinkling of zaatar, because I just love zaatar! So pretty and delicate to look at and moreishly delicious to eat. A definite treat! Ramadhan Mubarak and wishing you all a blessed month!

 

 

Baked Feta Cheese Rolls with Zaatar & Honey

Crispy golden phyllo rolls oozing with creamy white salty feta cheese speckled with green specks of aromatic parsley and zaatar, finished with a drizzle of sweet floral honey and earthy zaatar. A stunningly delicious appetiser or snack.

Ingredients
  • 2 cups (430g) soft feta cheese
  • 2 tbsp finely chopped parsley
  • 1 tbsp zaatar + extra for sprinkling
  • 24 phylo sheets, cut into rectangles (approx. 24cm x 15cm or adjust for desired size)
  • ¼ cup (60g) unsalted butter, melted
  • ¼ cup (85g) good quality honey
Directions
  • Step 1 Preheat oven to 180˚C (350˚F). Line baking tray with baking parchment. Set aside.
  • Step 2 Thoroughly combine the feta, parsley and 1 tbsp of zaatar.
  • Step 3 Take 2 phyllo sheets and brush the top with melted butter. Leaving approximately 2cm from the top and edges of the phyllo sheet place 1 tbsp of feta mixture at the top, shaping into a sausage horizontally. Cover the feta mixture tightly with the excess 2cm from the top and edges and then gently roll down tightly making sure it is sealed with the brushed melted butter.
  • Step 4 Brush the top of the roll with melted butter and place on the baking tray. Repeat until all the phyllo sheets have been used.
  • Step 5 Bake for 20 – 25 minutes until golden and crisp.
  • Step 6 Just before serving drizzle with honey and sprinkle zaatar on top.
  • Step 7 Enjoy x
